This dish is a triptych that brings together the forest, the alpine pastures, and the traditional art of mountain charcuterie, with a compositional purity that allows each element to express itself without overpowering the others. Three ingredients, three stories, one landscape.

The dessert menu carries the same distinctive identity, with the reinterpretation of bisciola — figs, walnuts, and raisins kneaded into rye dough, the oldest sweet of Valtellina’s tradition — brought back to the present through a contemporary sensibility: the same soul, a new form, and technique at the service of memory.

The menu changes twice a year, faithfully following the rhythm of the Alpine seasons. Each new edition pushes the boundaries of culinary research a little further, while never losing the connection that links every dish to the place where it is created. To complete the experience, a wine cellar curated with the same attention and care devoted to the cuisine: a thoughtful selection that enters into dialogue with the dishes and tells the story of the territory through the same voice.
